Cookery

59  A jar of marmalade, fruit of your choice - approx 1 lb/454g with wax disc

60  A jar of chutney, stating ingredients - approx 1 lb/454g

63  Banana bread (see recipe below)

     1 litre loaf tin lined with baking parchment, short ends well greased. Oven 180˚/gas mark 4.

     Ingredients

     250g self raising flour, good pinch of sea salt, 1½ teaspoon of ground cardamom, 100g unsalted butter cut into small pieces,

     125g light muscovado sugar, 100g raisins, 2 ripe bananas about 250g peeled weight, 1 egg lightly beaten, 1 tablespoon

      demerara sugar.

 

     Method

     Preheat oven. Sift flour, salt and cardamom into large mixing bowl. Add butter and rub in until mixture resembles medium

     breadcrumbs. Add muscovado sugar and raisins. Mix lightly and make a well in centre. In another bowl mash bananas until

      soft and slightly lumpy puree. Add egg and blend together, pour into well in dry ingredients. Mix together, then beat until

     mixture is thoroughly combined and has soft dropping consistency. Spoon mixture into prepared tin, levelling with back of

     spoon. Sprinkle top with demerara sugar. Bake for 45 minutes until well risen and skewer inserted comes out clean.

      Will keep for up to 5 days and freezes superbly.
